Fluffy Oven-Baked Frittata with Arugula, Blue Cheese & Tomato

Once out of the oven, it’s topped with fresh arugula, creamy blue cheese, and juicy tomato slices for a simple yet impressive finish. Ingredients for 3 servings

  • eggs 5 (better at room temperature)
  • milk 2 tablespoons
  • flour 2 tablespoons
  • grated cheese 2 tablespoons (Parmesan, Pecorino, Provolone)
  • baking powder for savory pies 3 grams
  • salt
  • pepper
  • fresh arugula 25 grams
  • blue cheese 50 grams
  • red tomato 1

To grease the baking dish

Preparation

Start by preheating your oven to 180°C (356°F). Separate the yolks from the whites.

Grab your electric mixer and beat the egg whites until stiff peaks form, and set them aside.

In another bowl, whisk together the yolks, flour, grated cheese, milk, baking powder, plus a pinch of salt and pepper until smooth.

Now gently fold the whipped egg whites into the yolk mixture with a spatula. Be careful here—mix slowly from top to bottom so you don’t lose all that air. The batter should look light and puffy.

Prepare your baking dish by buttering it and dusting with breadcrumbs, or simply line it with parchment paper as an alternative. Pour in the mixture and bake in static oven for about 15–20 minutes.

Ovens can vary, so check doneness with a toothpick: if it comes out clean, it’s ready; if not, give it a few more minutes.

When it’s done, flip it onto a plate or a cooling rack.

Top with crumbled blue cheese, fresh arugula, and tomato slices.

Serve it warm straight from the oven—or enjoy it cold, it’s just as delicious.
