The fight against boring salads continues; this beet, apple, carrot, and orange salad is proof that healthy eating can be exciting and delicious. Every bite brings a different flavour: tangy-sweet oranges, earthy cooked beets, crunchy walnuts, crisp apples, and sweet carrots.
The best part? The orange juice creates its own silky dressing—no bottled sauces needed. Just a drizzle of quality extra virgin olive oil, a pinch of salt and pepper, and you’ve got a restaurant-worthy salad that’s naturally vegan and diet-friendly.
Ingredients:
Serves 2 people
- Romaine lettuce, iceberg, or mixed salads 200 grams (or other types of salad as you like)
- Orange 180 grams
- Organic red apple 150 grams (I used a Fuji apple)
- Carrot 75 grams
- Cooked beets 200 grams
- Walnuts 30 grams
- Salt and pepper as you like
- Extra virgin olive oil 30 grams

Preparation:
If using raw beets, thoroughly wash the outer part using a small brush, put them to cook in plenty of water for about 30 minutes until you can pierce them with a fork, let cool and remove the skin using a knife.
If using cooked beets, move to the next step.
Wash, dry, and chop the lettuce, peel the carrot, wash the apple but leave the skin on, then cut it into cubes, peel the orange then segment it and cut into wedges.

Lastly, cut the beet into thin slices, because this colors the cutting board and you don’t want all the other ingredients to turn red.
Assemble the salad by combining the chopped salad, apple cubes, orange segments, then take a cheese grater and grate the carrot over the other ingredients. Add the beet slices and the walnuts coarsely crumbled. Season with salt, pepper, and extra virgin olive oil.
Mix before serving and your beet, apple, carrot, orange, and walnut salad is ready.
